Olive Garden Soup

Red potatoes – sliced

Italian Sausage – 1 package

Kale – 1 bundle roughly chopped

Onion – roughly chopped

white beans – 1 can

Broth – 4-6 cups

half and half – 1/4 cup

Italian spices – up to you

parmesan

Cook sausage and onion most of the way in big ol pot. Add potatoes and beans and broth with spices and bring to a low boil for 20-30 mins or until everything is cooked to your liking. Add kale for a final 2-5 min depending on your kale preferance. Add half and half. Tada!

My mother and I used to go to Olive Garden a lot, it was one of my favorite things to do as a kid. And we would always get the unlimited soup salad and bread sticks, but my mom eventually decided we could make the soup too. So she just figured it out and Ive been making it as a quick easy comforting soup, mostly when my husband goes out of town.
