Breaded Chicken Breasts

3/4 C dry bread crumbs or Panko

1/2 c grated parmesan cheese

4 1/2 tsp minced fresh parsley

3/4 tsp salt

1/4 tsp pepper

1/3 C butter or margarine

3 T lemon juice

2 garlic cloves, minced

6 boneless skinless chicken breast halves

Dash paprika

In a shallow bowl, combine the bread crumbs, parmesan cheese, parsley, salt and pepper.

In another bowl, combine the butter, lemon juice + garlic.

Dip chicken in butter mixture, then roll in crumbs.

Roll-up chicken, jelly-roll style; place seam side down in a greased 11-in x 7-in x 2-in baking dish. Drizzle with any remaining butter mixture; sprinkle w/ paprika. Bake, uncovered at 350 degrees for 35 minutes or until juices run clear

Recipe Story:

This recipe is important to me because it was passed down to me by my mother. My mom wanted me to learn how to cook a few dishes before I left home for college. My favorite meal is her breaded chicken breasts, so naturally it was the first dish I asked to be taught. One of my favorite memories with her is making this dish together.
